Summer squash casserole makes the most of garden bounty
timesfreepress.com · 13h · first report
Among the best things of all the wonderful summer produce that used to come from my father's vegetable garden were the sweet summer squash, primarily zucchini, that grew in abundance. He had so much zucchini that sometimes it got lost in his garden and would grow as big as a baseball bat. Well, not quite, but almost. And then there was his prized, yellow squash that he never let get very big because my mother always preferred the small ones, saying they were much sweeter than the really large ones you see in the supermarkets these days. Yellow squash is not meant to be big, but left unattended, it will get rather large.
